It’s December!! I’m so excited because it’s my favorite time of the year. Our house is decorated and I’m trying to get into the holiday spirit. I’m hosting our team Christmas party at my house on Friday and I’m making some tasty appetizers to share. While my curry is currently simmering, I’ll fill you in on what I’m planning on making this week.
Chickpea and Potato Curry– I used the recipe that I made up the last time I made curry and I’m excited to try it again because it was so good the first time! Yum!

Crispy Tofu Vegetable Noodle Bowl- One is my favorite go to meals! It’s easy, delicious, and it tastes great every single time.

Vegan Eggplant Parmesan- I’m going to bread these with almond milk and breadcrumbs, and bake them with a little vegan parm on top. They’ll be crispy and I’ll top them with marinara and a side of pasta.
Lentil and Spinach Dal- Josh and I went to see a movie Friday and went to Whole Foods before for a quick bite for dinner. I got a slice of vegan pizza and he shocked me when he got a cup of lentil dal… the guy who refuses to try curry or any kind. When I told him that’s literally what curry tastes like, he was resistant but he liked it so I’m going to try and make it too.
Christmas Party- I’m having a party and I’ll be the only vegan so I’m making sure I’m making enough food that I can enjoy and have others try it as well. I want to make things that they’ll enjoy, so I’m making some vegan yummies!
Spinach and Artichoke Crescent Wreath- ummm yumm! I made this for a Christmas party last year and it was great! Tofu based and so festive!
Herby Cashew Cheeze ball- I’m attempting to make my own vegan cheese made from cashews and herbs and serving with veggies and crackers.
