
These are a really simple and delicious option for a quick dinner. They’re healthy, full of flavor, and have the same taste of traditional fajitas. I love using portobellos as a meat replacement because they’re hearty and can take on the same flavors and texture. They have protein and are great for you! You just have to slice everything up and then saute it and that’s pretty much the extent of this meal. Perfect for taco night!
Portobello Fajitas
2 portobellos, cleaned and sliced
1 yellow onion, halved and sliced
1 of each- red, yellow, and orange bell pepper, sliced
7-8 corn tortillas
Toppings- lettuce, tomatoes, cucumbers, avocado, salsa
Homemade Taco Seasoning-
1 tsp chili powder
1/2 tsp onion powder
1/2 tsp garlic powder
1/8 tsp smoked paprika
1/8 tsp oregano
1/8 tsp cayenne pepper
salt and pepper to taste
- Saute onions and peppers for 5-7 minutes until they become tender.
- Add spices and portobello slices and combine, cook another 5 minutes.
- Warm tortillas in the oven or toaster oven until they’re soft, then fill with veggies and add toppings.
