
After a long weekend of fun at my cousin’s wedding, I need to detox. We had so much fun that included celebrating them while eating and drinking. I’m thankful there were vegan options for me to have all weekend long so it made it easier. At the bridesmaid luncheon I had a vegetable panini and a salad. At the rehearsal dinner I had veggies, salad, and bread. I made muffins that I brought and had for breakfast Friday morning. While we were getting ready, my other cousin’s girlfriend catered and made a delicious quinoa salad that I had with veggies, hummus, and way too many pita chips. At the reception they made a plate with potato cakes, and a black bean and corn torte. There was no going starving here! Moral of the story- when going to events, don’t be afraid to ask if there can be vegan options. Your family and friends will want to make sure you can eat, and if there isn’t that option you can usually find something. Also, bring snacks! Don’t feel like going to functions will be stressful because of food options. Have fun and enjoy yourself!
This week I need to get back on track. I feel like I loaded up on avocado, nuts, and anything I felt like this weekend so back to low fat options. I just went to Trader Joe’s and stocked up for the week and guess how much I spent? Answer below! Here’s what I’ll be making!
Lentils and rice, mushrooms, and asparagus- This is a comfort classic and I never used my mushrooms and asparagus last week so it’s a way to use them up.
Minestrone soup- Fall is finally in the air and it’s time for soup. This is jam packed with beans, veggies, and greens.
Egg roll in a bowl- Cabbage, Bok Choy, and everything in a Veggie egg roll in a bowl.
Fall Pasta Salad- sweet potatoes, brussel sprouts, mushrooms, and other roasted veggies mixed with bow tie pasta and a sweet mustard dressing.
Veggie Pot Roast- I’m roasting mushrooms, carrots, onion, and potatoes in a stock pot with bouillon until tender.
Halloween Stuffed Peppers- Rice, beans, and sauce stuffed into a carved orange bell pepper for my Hocus Pocus viewing party.
