Meal Planning 10.8.18

I almost forgot to post what I’m making this week! Whoops! I made these tacos with leftovers from last week’s potato nachos. They were scrumptious! I wanted to try a few new things this week so lately I’ve been using other people’s pictures on Instagram as inspiration. Here’s what else I’m making this week!

Tofu and Veggie Summer Rolls– I’ve always wanted to try to make these because they look beautiful and are a light and healthy dish. I’m using tofu, veggies, and rice noodles to make them and I’ll make a peanut sauce for dipping.

Butternut Squash Buddha Bowl- It’s butternut squash season y’all! I’m going to roast it with mushrooms, and brussel sprouts over rice.

Soba Noodle Bowl- I’ve had some soba noodles in the pantry for a while so I’m going to make a bowl with shiitake mushrooms, Bok Choy, and spinach.

Portobello Ragu over Pasta- I saw a recipe for this and it looked delicious! I wanted to give it a try.

Dr. Praeger’s Burgers and veggies- I picked up a box of these and am going to roast some veggies to go with them. Something easy!
