Before I indulge in all of the finger foods I’m planning on making today, I started the day off right with a delicious nice cream bowl. This has been my favorite kind because it gets so fluffy and light. I’m not sure if it’s from the packet of JuicePlus powder or the combination of fruit but it’s so good!
Chocolate Blueberry Nice Cream
2 frozen bananas
1 cup frozen mango
2 medjool dates, pits removed
1 cup blueberries
1/2 cup dark cherries
1 packet Dutch Chocolate Juice Plus powder
1/2 cup almond milk
Blend in a high speed blender and I topped with rice crispies, blueberries, coconut chips, and dark chocolate chips. It’s a sweet breakfast that’s healthy, unlike so many sugary cereals and pastries that are not.
I wanted to make some fun appetizers for Super Bowl, even if it’s just Josh and I watching from our house. That’s if our cable comes back on… but it’s in Atlanta this year and there’s been so much hype about it! I meal planned on Friday and had an idea about what I wanted to do and then filled in some items while at the store. Here’s what we’ll be nibbling while we watch the Rams hopefully beat the Patriots, be impressed I know who’s playing. I’ve always been more of a girl who’s there for the snacks and commercials!
Twigs in a Blanket- I found Lightlife veggie dogs from Trader Joe’s that I’m going to cut into bite size pieces and roll up in their crescent rolls. I’ll sprinkle with everything but the bagel seasoning and bake until crispy then dip in mustard. Yum! Twigs over pigs!
Cilantro lime hummus tray- I made this hummus yesterday from a can of chickpeas with some of their liquid, lime juice, cilantro, tahini, cumin, garlic, and salt. So tasty and perfect to dip with toasted pita, carrots, and cucumbers. It’s a great spin on the classic for parties.
3 Layer Mexican Dip- A layer of fat free refried beans, guacamole, and salsa, could it be any easier? I’ll top with some fresh cilantro and bake some oil free tortilla chips for dipping.
Burger and fries- I bought a box of Dr. Praeger’s California Veggie Burgers to put on some whole wheat buns with lettuce, tomato, pickles, mustard and ketchup and I’m baking some crispy oil free baked fries on the side. You can still have a burger while you watch the game!
Valentine’s Gummies- I bought the Valentine’s Day gummies from Trader Joe’s that are vegan and so good! I love how they have them seasonally so they’re fun for every occasion and always taste delicious.
