BBQ Lentil Balls

I made these BBQ Lentil Balls the other night and they were so tasty! They’re savory and hearty and I paired them with roasted potatoes and onions and garlic green beans. They’re protein and healthy carb packed and have minimal fat. I found the easiest way to make lentil based things is to buy lentils precooked. I like the steamed lentils in the refrigerated section of Trader Joe’s because it makes things a lot faster and easier. I took out the oil when cooking the onions and mushrooms and just used a little water and I added a tsp of Vegetarian Better than Bouillon no beef base to the mixture while in the food processor. You pretty much add everything to the food processor, scoop, and bake. The mixture came together quickly and then I accidentally dumped in way too much liquid smoke, luckily they still turned out! I use a small ice cream scoop to scoop out the balls to put on a silpat baking mat. They made a lot more than 12 balls, so it made about 6 servings. I roasted some gold potatoes and chopped onions with seasoning salt and pepper and I sautéed fresh green beans with water, minced garlic, and salt and pepper.
