Vegan French Toast

Frigid, fire, football, French toast, and food memories! My grandpa always made the grandchildren French toast when we were over for breakfast and now it’s become a food memory just like everything else he used to make. Now when I make those things, I’m basically crying by the time I sit down to eat it. Isn’t it weird how food memories affect you? He was a great cook and loved cooking for people, that must be where I get it from. He loved entertaining and making people feel comfortable and happy. He wanted everyone to love what he made and he was very particular about how he made things, how it should be plated, how it should be served, etc. They used to have a houseboat where we would spend the night and he would whip out his griddle and make French toast for us. I also have this memory at their mountain house where we would spend Thanksgiving and Thanksgiving morning he would make it for anyone who wanted it while we watched the parade before we started prepping Thanksgiving food together. I would always ask for a quick dip and extra cooked because I hated when it still tasted mushy, but what I would give for him to cook me something again! He was always really proud of me for cooking and always was complimentary of whatever I made. He was proud of me for trying to be my healthiest self and always told me so. I think he would be proud of my healthier version of French toast, and it was still really delicious. This time of year I miss him extra because I was lucky to make so many memories with him, so I better get it together before I make his stuffing for Thanksgiving!

I got this French toast recipe from High Carb Hannah and the veganized version is delish! I used Dave’s Killer Bread Raisin the Roof and it made the perfect French toast! She used soy milk but I had almond milk on hand. I topped it with bananas and maple syrup and YUM what a treat! I may have had 3 slices.

Vegan French Toast

6 pieces Dave’s killer bread Raisin the Roof

Bananas and maple syrup for topping

1 cup almond milk

3 tbsp oat flour (just made it in my food processor)

1 tsp nutritional yeast

1 tsp flax meal

1 tbsp maple syrup

1 tsp vanilla

1/2 tsp cinnamon

Pinch of salt

1. Heat griddle or skillet over medium heat.

2. Whisk all of the last 8 ingredients together in a shallow dish.

3. I dunk the bread quickly so it doesn’t get too mushy and then place right on the skillet. I used a bit of spray olive oil because mine was sticking.

4. Cook on each side for about 2-3 minutes until golden brown.

5. Top with sliced bananas and maple syrup for a weekend treat!
