Vegan French toast 2

Starting our Memorial Day off right with this delicious cinnamon raisin French toast! It’s not soggy in the middle like some French toast, and it was a crunchy crust that makes it extra scrumptious. It’s dairy and egg free so healthier than traditional French toast and it’s the perfect crowd pleaser because it doesn’t take long to make. Just whisk the batter together, give the bread a quick dunk, and cook in the pan until cooked through. Top with maple syrup and fresh fruit for a delicious breakfast! I’ve made another French toast recipe that’s on the blog, but I prefer this one because you don’t get the graininess from the oat flour.

Vegan French Toast

2 tbsp chickpea flour

1/4 tsp turmeric

1 tsp nutritional yeast

1 tsp cinnamon

1 tsp vanilla

1 cup almond milk

6 slices Dave’s Killer Bread Raisin the Roof

Earth Balance vegan butter

Maple syrup and fruit to top

1. Whisk all of the ingredients through almond milk and combine to make the batter.

2. Heat a large skillet over medium heat and melt 1 tsp vegan butter.

3. Dip and flip each piece of bread in the batter quickly so it doesn’t get soggy and add the the hot pan.

4. Cook about 3-4 minutes on each side until crispy and cooked through and top with maple syrup and fruit.
