
I’m always looking for a way to get oatmeal into my diet, so this morning I decided to try something new! I used what I had to make this blueberry lemon oatmeal and it was so good I finished my bowl! It tasted like a tasty blueberry lemon muffin. I added a little brown sugar for sweetness and the lemon brought brightness to balance it out and I loved it! If you’re bored of the same old apple cinnamon variety, I really recommend making this to change it up. It’s quick, easy, and so good for you!
Blueberry Lemon Oatmeal
Serves 2
1 cup quick cook oats
1 cup unsweetened almond milk
3/4 cup water
1/2 cup blueberries
1/2 tsp lemon zest
1/2 lemon juiced
2 tsp brown sugar
Dash of cinnamon
Fresh blueberries and extra lemon zest for the top
1. In a small pot, add the oats, almond milk, and water and bring to a low boil.
2. Add the blueberries, cinnamon, and brown sugar. Stir and try to mash some of the blueberries.
3. As it’s getting thick, add the lemon juice and zest and combine. It will make it turn a brighter pink color!
4. When it’s the consistency of your liking, scoop into a bowl and add more fresh blueberries and lemon zest on top.
