Egg Roll in a Bowl with Grilled Bok Choy

I found this recipe on Pinterest and thought it might be a healthier option than ordering greasy egg rolls from Chinese delivery (again). It’s vegan, oil free, GF, and has the same Asian cabbagey taste without all the fried fatty parts. I didn’t add the peas, just the Edamame for protein and swapped the black rice for brown. I decided to cut some Bok Choy in half and throw them on my grill pan for a few minutes on each side and top with green onions and sesame seeds. I also added some extra soy on top. It’s something different than what I normally make and it was a nice change!
