
I’m always up for a bowl full of saucy, salty, flavorful noodles packed with veggies. Since I crave them so often, I try to come up with new combinations to make it interesting each time. Shiitakes are the most popular mushroom for Asian cooking and I love using Bok Choy in stir fries for a different veggie than I normally use. In this case, I also threw in some zucchini and spinach that I wanted to use up and it made a nutritious and tasty bowl! I didn’t used my usual oil free teriyaki and just added some of my favorite flavors to make a quick sauce to combine. Since the soba noodles only take about 5 minutes to cook, this is a super fast and easy meal for any night of the week. Did you know soba noodles are a great source of protein, fiber, thiamin, flavonoids, and are fat and gluten free? I did some research and it makes me feel good about eating them so often! They’re a great noodle choice and they’re super versatile!
Shiitake and Bok Choy Noodle Bowl
1 Package of soba noodles
3 baby Bok boy, chopped
1 package of shiitake mushrooms, sliced
1 bag baby spinach
2 small zucchini, quartered and sliced
1 tsp minced garlic
1/4 cup low sodium soy
1/4 cup coconut aminos
1/2 tsp powdered ginger
3 green onions, sliced
Pepper to taste
Sesame seeds to top
1. In a large wok, sauté veggies over medium heat until tender and spinach is wilted.
2. Add in garlic and ginger until fragrant.
3. Boil noodles for 5 minutes and drain.
4. Add noodles to veggies and add in the sauces and pepper then stir to combine.
5. Top with green onions and sesame seeds.
