I’m taking the time while my family naps to write about this week’s upcoming menu. My sister had a baby on Monday, so we’re visiting them this weekend in Philly! It’s been so much fun playing with our 2 year old nephew and holding our newborn niece, but everyone needed a nap. I decided to spend this quiet, rainy hour to meal plan so that I can shop and start cooking the Monday I come home. This weather is probably influencing these wintery comfort food dishes and I might regret it later this week when it’s 98* at home, but for now they sound good. Here’s what I have planned-
Refried Bean Tacos or Bowl- Since I left Friday afternoon to come here, we never had the bean burritos I had planned so that will be one meal that’s already done!
Broccoli Mac n Cheese- I’m going to make a veggie based cheeze sauce and mix it with roasted broccoli and whole wheat pasta for a healthy Mac n cheeze.
Chickpea and Potato Curry- This is like a vegan “butter chicken” style curry with chickpeas, potatoes, spices, and coconut milk over brown rice.
Chickpea Pot Pie Lasagna- This is a Dr McDougall Starch Solution recipe that I found on the app. It’s a Chickpea pot pie filling in between whole wheat lasagna noodles and baked. Best of both worlds!
Hummus and Veggie Wraps- I wanted to make something light and easy for a change in the week’s heavy meals. I add homemade hummus with cucumber, lettuce, and tomato inside a lavash.
Portobello and Caramelized Onion Sliders– Kind of self explanatory, but sautéed slices of portobello and sweet caramelized onions on a toasty ciabatta roll. Yes please! I’m planning on making some veggie side, whatever looks good at the store.
