Cauliflower Curry over Vegetable Rice

This cauliflower curry was DELICIOUS and made by one of the moms in my class! She’s so sweet and has made me food several times and every time I’m so thankful. I cook so much that it’s a luxury to have someone cook for me! It’s always veganized and so tasty and I eat it for a few meals. THANK YOU KIM!

This morning I meal planned for next week and planned to make a few new things this week. I looked around Pinterest and Instagram for recipe ideas and came up with a list. The weather is beautiful and we’re loving the fall! It’s soup weather and comforting food season. I’m trying to still keep it healthy and interesting so I hope you like what I have planned so you can add it to your list!

Taco Tortilla Soup- I never made this last week so I’m making it tomorrow. It’s black beans, corn, tomatoes, in a vegetable broth with spiced and crispy tortilla strips on top.

Hawaiian Tofu Bowl- I’m making this recipe from Rabbitsandwolves that’s sweet and spicy coated tofu over rice and I’m adding green beans as well.

Broccoli and Chickpea Cheezy Rice Bake- This looked super simple. Dry rice with broth, nooch, broccoli, chickpeas, and spices and bake for an easy dinner.

BBQ Lentil Balls with Potatoes and Zucchini- These looked so tasty so I’m going to try them out!

Mushroom Marinara Pasta- I’m going to combine some mushrooms, zucchini, and marinara to top the Banza pasta I’ve wanted to try for a while.
