
This is about as easy as they come! You only need a crockpot and very few ingredients to make a simple, tasty meal for a busy night. I got this recipe from the McDougall app and you can add whatever marinara sauce and toppings/veggies you usually put on your pizza to make these easy pizza potatoes. It’s also super cheap because you just need a few russet potatoes (I got a bag of them for under $4), a jar of marinara sauce, and whatever toppings you choose so I picked mushrooms, onion, and red pepper. I used my mandolin to slice the potatoes really thin, and it almost reminded me of a pizza scalloped potatoes. If you don’t have a mandolin, just slice them by hand thinly or you can probably cut them however you want but I liked this way because it made layers. I topped mine with nutritional yeast, Italian seasoning, salt, and pepper. It’s not very pretty, so I had to add the flowers in the background!
Crockpot Pizza Potatoes
4 large russet potatoes, thinly sliced 1/8-1/4 inch thin
1 jar marinara sauce, I used Organic Marinara from TJ’s so no oil
8 oz mushrooms, sliced
1/4 cup red onion, diced
1 red bell pepper, diced
toppings: nutritional yeast, Italian seasoning, salt, pepper
- Slice potatoes and layer half on the bottom of your crockpot and top with half the jar of sauce.
- Add half toppings then top with the other half of potatoes, sauce, and toppings.
- Sprinkle with nutritional yeast, Italian seasoning, salt and pepper to taste.
- Cook on high for 4 hours.
