Meal Planning 3.16.19

It’s my Saturday morning meal planning time and I just finished planning what to make this week. I know I want to make some kind of green breakfast tomorrow for St. Patrick’s Day and I’m thinking maybe donuts since they were such a big hit. Or maybe a green smoothie bowl, which would be easy to do with spinach! Guess I’ll decide tomorrow. We just planned a game night with Josh’s cousin and her fiance for Friday night so that hasn’t been decided yet because I’m waiting to see what she wants me to make after looking at my blog. She just went vegan again so it’ll be easier to make everyone happy!

Thanks for everyone who told me happy birthday on the blog and my instagram! That was so nice. I really appreciate it! I had a great day at school with my sweet class and friends, and then had a great birthday dinner at Seed with my family. I’m still putting presents away so it’s a good problem to have. Josh and I are having a birthday dinner date tonight and then it’ll be the end of celebrations.

Here’s what I’m planning on making this week:

Chickpea Buddha Bowls– We have a lot of leftover veggies like kale, brussel sprouts, and broccoli so I’m going to roast some chickpeas and make rice and some sort of sauce to top it with. This is the best thing to have when you’re trying to clean out your fridge!

Mushroom Tetrazzini– My mom used to make tetrazzini, so I’m making a mushroom and pea variety from Vegan Richa. It’s noodles, mushrooms, peas, and breadcrumbs in a creamy white sauce baked in the oven. Yum!

Taco Salad- What’s funny is people think vegans only eat salads and I have to remind myself that I probably should eat salad every once in a while to get a lot of raw veggies. I’m making a taco salad with cooked black beans, peppers, onions, and roasted corn with carrots, cucumbers, and tomatoes too. I’ll have some sort of salsa style dressing and baked tortilla strips.

Teriyaki Tofu Bowl– I’m making my crispy oven baked tofu, tossed with my oil free teriyaki sauce and cooked broccoli and serving it over rice. Simple, balanced, and delicious.

Veggie Sushi- Josh got jealous that I made sushi last week for friends and he said I haven’t made it for him in a while so I decided to make it!
