
My class this year has been so well behaved this year (overall) so it makes me want to bake for them more often as a treat. We are the Blair’s Bakers after all! I have a student with a gluten allergy and another with a nut allergy so I try to find treats that they can all enjoy. When I saw these on Pinterest I had to give them a try! I have a love for banana bread because it was my old signature before going vegan and these were almost like banana bread cookies. They are puffy, fluffy, and light and almost the texture of banana bread. After cooling off they had a nice sugary crust and after a night in a bag they got softer, so I would think serving right away would be better. I made my own oat flour by blending quick oats in my food processor until it makes a fine flour. The only change I made to make these oil free is I changed out the oil for apple sauce so I used 1/2 c of applesauce instead. If you like banana bread and snickerdoodles, you should definitely give these GF vegan goodies a try!
