^ One of last week’s simple meals- Simple Chickpea Salad: romaine, tomatoes, cucumbers, can of chickpeas, scallions, carrots, and a fat free balsamic. I was going to add avocado too, but forgot…Oops!
It’s working! Starch Solution works! I’m officially down 20 lbs and back to my wedding weight. It’s amazing because it feels like I’m not dieting at all, and I’m always eating. I’m eating bigger portions and more carbs than I ever have in my life. I’m eating food that is delicious, healthy, and fresh. I honestly wish I would have found this lifestyle so long ago without going through the aggravation of so many weight loss programs. Nutrisystem gave me the results but it was absolutely miserable eating astronaut food from a box that tasted awful. Weight Watchers never really worked for me and it pushes people to eat chemical filled low calorie packaged and processed food because it’s low on points. You should be eating what makes your body feel GOOD and function properly, and I’ve finally found what my body craves and I wish I could spread this news to everyone that wants to lose weight, get digestive issues solved, clear skin and thicken hair, lower blood pressure and cholesterol, and eat great food while doing it and never feel hungry. I would recommend reading Starch Solution to anyone interested in this lifestyle.
Recipes that are low in fat and high in carbs are coming more easily to me and I’m getting in a routine. I’ve just been eating these meals and not really focused on weight loss and it’s been coming off slowly but surely. Do I have take out or go out and eat my weight in chips and salsa? Yes, about once a week, but the rest of the time I don’t keep fatty food in the house. Here’s what I’m planning this week-
Creamy Summer Veggie Linguine- This is a cashew based cream sauce packed with lots of veggies and pasta.
Stuffed Bell Peppers- I’m stuffing halved bell peppers with brown rice, onion, black beans, corn, spices, and salsa.
Chickpea Loaf with Roasted Potatoes and Asparagus– I found a recipe for this different kind of loaf I haven’t attempted before and looks delicious!
Minestrone Soup- Veggies, white beans, and elbow pasta in a warm and filling soup. Come on Fall!
Curried Mushrooms and Chickpeas– This is a simple curry from McDougall recipe app and looks perfect for a Josh working late night served over brown rice.
I hope you all have a wonderful week and share these recipes on Instagram with #thecharmingchickpea hashtag!
