Georgia got SNOW! Not just, a centimeter like usual, but we got 5-6 inches in my backyard. This, of course, caused chaos trying to get kids home from school but once we all got home we got to watch inches of snowfall and now it looks like a winter wonderland. Luckily we live about 2 minutes from our favorite chinese restaurant (dangerously close) so we walked there Friday night with Louis and picked up dinner and had a snowball fight on the way home. Yesterday I cuddled up by the fireplace and meal planned for the coming week. Here’s what is on our menu this week if you’d like to follow it as well!
–Beyond Meat Burgers and Roasted Broccoli/Cauliflower B(they’re the best plant based burgers we’ve had yet!)
– Easy Ratatouille with Potatoes– I have a lot of tomatoes leftover so thought this would be something fun to try, I do like the movie after all. Recipe here
–Butternut Squash Mac and Asparagus – The adult version of my childhood favorite, with the bonus of it not making me sick. Recipe here
– Black Bean Burrito Bowls – one of my weeknight go tos (black beans, seasoning, brown rice, and favorite toppings)
–Lentil Sloppy Joes- These are delicious and very filling. The best recipe I’ve found is this one from Minimalist Baker. Recipe here
–Peanut Tofu Buddha Bowls- I haven’t made this one yet, but it looked too good not to try. I’ll let you know how it is! Recipe here
