I made these chocolate cookies for my mother in laws birthday party on New Year’s Day and we enjoyed a few on New Year’s Eve when I baked them while waiting for the ball to drop. I found the recipe on one of my favorite vegan blogs and she makes the best desserts. It’s Chocolate Covered Katie and there’s so many things I want to make from her site! These were made with things I already had in my pantry and were a breeze to make. I added a lot more almond milk than was called for to make a wetter dough because mine wasn’t forming with the amount it said but that’s the only change I made. I let the dough sit in the fridge to firm up and baked them about 8-10 minutes. The first batch was longer and they got really dried out so be sure to time them! When baked for the right amount of time they come out really fluffy and cakey. They’re not super sweet, but they fill that chocolate craving. I want to try using apple sauce next time instead of the oil, but for the first time I wanted to stick to the recipe to see what they were supposed to be like. They make a lot and are great for a party.
