It’s Valentine’s week! I’m so excited to celebrate all of the people I love and take the time to acknowledge it. I know we should always let everyone we know how much we love them, and I try to, but it’s nice to have a reminder to go above and beyond what we usually do and celebrate each other and the variety of relationships we have. I’m celebrating the love I have with my husband, my family, and my friends this week so I’m ready for a week of fun. It’s also my parent’s anniversary so happy anniversary week mom and dad!
Tomorrow I’m hosting Galentine’s Night with some of my best friends so I’m going all out! I’m making dinner and decorating to get in the valentines spirit. Roses, chocolate strawberries, and using the fancy china to celebrate them. I hope everyone enjoys the week!
Galentine’s Dinner- I’m making an Italian themed dinner with a layered dip to start with hummus, pistachio pesto, and bruschetta with toasted baguette slices. Next I’m making a veggie cashew cheeze baked ziti with toasty bread and a big salad. For dessert I made chocolate covered strawberries and bought some Sour Patch Kids hearts.
Tofu Singapore Noodles- crispy tofu, veggies, and curry spiced noodles, yum.
White Bean Spinach Soup- I’m making this simple soup with cannelloni beans, spinach and whatever else I find with a side of crusty bread.
Heart Shaped Pizza- We usually eat in on Valentine’s to avoid the crazy crowds and meat centered special menus, so this year I’m making some heart shaped veggie pizzas! Festive, yummy, and easy!
Pizza Burgers- These burgers have beans, quinoa and tomato sauce to make a pizza flavored burger on buns with basil and tomato. I’ll make hand cut baked fries on the side.
