Everyone loves spinach and artichoke dip because it’s creamy, flavorful, and you feel semi healthy eating greens in form of a dip. Spinach and artichokes are such a popular pair, so why not enjoy them in pasta which is also a popular favorite. Delicious! I found this recipe and Pinterest and it’s so creamy and worked out really well. Cashew cream is a game changer because it’s so smooth and creamy and replace any dairy cream. It’s so easy to make and came together quickly. It’s such a comforting and tasty meal! I followed the recipe except for a few things. I only used 1/4 cup of cashews, replaced corn starch for tapioca starch, and used apple cider vinegar instead of miso for tang. I used a can of artichoke hearts and a bag of baby spinach along with whole wheat Penne and topped it with Violife Vegan Parm and it was amazing!
