Meal Planning 11.11.18

First off, I know these aren’t a meal but I made them into one. 🙈 Easy Vegan Rice Crispy treats with dark chocolate chunks were so simple to make, just like the originals but sub with vegan butter and marshmallows from Trader Joe’s for a quick and tasty treat!

Will the rain ever end? I don’t think the roads or I can handle 3 more days of rain, or indoor recess. I’m making a lot of comforting and warm meals this week to balance it out. Get ready for some soups! Here’s what I have planned this week-

Chickpea Noodle Soup– I wasn’t feeling great last weekend so I made this simple chickpea noodle soup and it was just what I needed. Josh loved it too!

Refried Bean Taco Salad– This was easy and delicious! I just had a bowl with brown rice and added a scoop of Trader Joe’s fat free refried beans, tomatoes, cucumbers, lettuce, avocado slices, and cilantro then topped with salsa.

Broccoli Potato Soup- I’ve made this before and the recipe is on the blog. It’s a simple veggie potato soup that’s oil free and served over a little mound of rice. I make mine a little spicy with red pepper flakes on top.

Stuffed Shells- I’m making stuffed shells with tofu ricotta and mushrooms with marinara sauce.

Bad Billy’s Bean Chili– I use my dad’s chili recipe and adapt it to be vegan with beans. It’s so good! I top it with avocado. The recipe is already on the blog.

Veggie Fried Rice- This is a common staple we have because it’s so good and simple.
